Observation (CORRECTED DURING INSPECTION):
Left preparation cooler: rice, yogurt, and fritter stored in inserts internal food product temperature ~ 14-15 degrees C. Chick peas and potatoes ~14 degrees in the lower section.

Right preparation cooler: butter chicken sauce stored in lower section internal food product temperatures ~13 degrees C.
Corrective Action(s): Above items all discarded. Ensure all cold potentially hazardous foods are stored at or below 4 degrees C.

Note: staff adjusted the temperature setting of both preparation cooler. Ambient air temperature for both coolers now at or below 4 degrees C.

Monitor and record temperatures of both of these coolers using accurate indicating thermometers.

Observation (CORRECTED DURING INSPECTION): Knives observed stored in the spacing between the wall and the right preparation cooler.
Corrective Action(s): Do not store knives in this manner. Store knives on a magnet strip, on a clean tray, in a container, etc. Knives washed in the low temperature dishwasher. Ensure all utensils are stored in a sanitary manner at all times.

Observation: Scoop for dispensing ice from the ice machine left inside. Scoops and other dispensing utensils stored directly in dry products.
Corrective Action(s):
Ensure the scoop for dispensing ice is stored outside of ice machine and in a sanitary manner.
Ensure all scoops and dispensing utensils for dry products are stored outside of containers and in a sanitary manner at all times.

Chest freezer at -20 degrees C. Upright freezer at -14 degrees C. Adjust to colder setting. Ensure all freezers are at or below -18 degrees C.
Dishwasher registers 50ppm chlorine during the final rinse cycle. Test strips available for use.
Hand sink provided with liquid soap and paper towels.
200ppm quats dispensed from the chemical dispensing station in staff washroom.
100ppm chlorine available for sanitizing food contact surfaces.
Permit posted in front area.
Bar hand sink provided with liquid soap and paper towels.
Banquet hall area provided with a hot holding unit for buffets. Unit is currently not in use. Unit is equipped with a sneeze guard.
