Basement storage room: Upright freezer was at -19 degC; chest freezer was at -20 degC
Main kitchen: Upright cooler was at 2 degC and freezer compartment was at -19 degC; rice was hot held at 79 degC
Discussed 3-compartment method of dishwashing; chlorine used for sanitizing.
