-Hot foods are now rapidly cooled in prep sink with ice bath
-Pots of sauce stored at on plastic pallets at least 6 inch of the ground
-Condiment station food covered with plastic wrap and small lidded pots have been purchased to protect food from contamination - satisfactory solution to sneeze guard/ food protection
-veggies are stored in separate cooler from meat to prevent contamination.
-Ice machine has been cleaned and appears to be maintained in sanitary condition
-Knives and peelers appear to be in sanitary condition

-Sanitizer buckets noted 100 -200 ppm chlorine noted in kitchen and bar
***ensure wiping cloths are soaking in sanitizer when not in use

-Removable ventilation panels have been cleaned.
***Professional service for the rest of commercial hood ventilation system still requires servicing - dripping grease.
