Observation: The dishwasher has been serviced and is still not providing a hot water final sanitizing rinse. The operator is using single service plates for bigger events and is sanitizing all dishes, pots, utensils, etc. manually using 100ppm (tested today with a test strip) until the dishwasher has been fixed. The small cooler is empty as there is more ice building up on the back.
Corrective Action(s): Do not use the dishwasher to sanitize dishes until it can provide a hot water sanitizing rinse (71 C/160F measured inside of the machine. Temperature indicator strip given to operator. The gauge should read 82 C/180F. Correct as soon as possible. Call Fraser Health when fixed.
Repair small prep cooler if extra fridge space is needed (4 C /40 F or colder is required for potentially hazardous foods).
