Observation:
Found mice droppings in the dry storage room on the floor and shelves, and on the floor along the base of walls in the front cooking area. Mice and their droppings carry diseases.
Corrective Action(s):
1) Clean up the droppings, wash surfaces with hot soapy water, and then sanitize with a hot bleach solution.
**Correction date: Today**

2) Increase the frequency the pest company is coming in to service the premises. Show them where the droppings are being found. Follow all recommendations and directions provided by the pest company to eliminate the mice.

Observation:
1) There are gaps at the base of external doors, and openings around waste pips in the back food prep area. Mice can enter the premises through gaps and holes.

2) Packages of food (open & unopened) found in the dry storage room. Mice will gnaw through the package to eat the food.

3) There is accumulated grease and food on the floor under the front cook stations, prep tables, and coolers. This will attract pests.
Corrective Action(s):
1) Immediately purchase and install door guards/sweeps on the base of doors to keep mice out. Block all holes and opening in walls and around pipes with metal plates, steel wool, or wire mesh that is 1/4" or smaller.

2) Purchase hard plastic containers with tight fitting lids and store all packages of food in them.

3) Clean up the areas mentioned with hot soapy water and then sanitize with bleach. This shall be done every day.

Observation:
1) There is accumulated food and grease on the floor, walls, and sides of equipment & sinks in the front cooking area. This will attract mice.

2) The exhaust canopy has come food debris accumulated. This will attract mice.
Corrective Action(s):
1) Immediately clean up the food and grease. Use hot soapy water and a scrub brush to remove the grease. Then sanitize with hot bleach solution. Move equipment and tables away from walls so staff can clean the floor under it. This shall be done every night.

2) Immediately call a professional company to clean and service the exhaust hood canopy and filters.

Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -20C or colder; hot holding units above 60C; and thermometers present.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Low temperature dishwasher had [Cl2] of 100ppm.
- Bleach sanitizer in spray bottles and cloth buckets had [Cl2] between 100-200ppm.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with raw proteins separate or below RTE foods; and all foods stored 6" off the floor on shelves or platforms.
- Storage areas are clean and organized.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good, improvement needed in the mentioned areas.
- Mice droppings found in the mentioned areas.
- Exhaust canopies and filters were required to be professionally cleaned in March 204, as per service sticker.
- FoodSafe certified staff present, or those that possess an equivalent (recognized) course.
- Owner confirms he received the yearly permit fees invoice and will pay it next week.
- Front hand washing sink has been fixed and has running hot and cold water, liquid soap, and paper towels.

ACTION
Clean up the mice droppings in the dry storage room and in the front cooking area. Wash all surfaces with hot soapy water, and then sanitize with a hot bleach and water solution.
Store all packages of food in hard plastic containers with tight fitting lids in the dry storage room.
Schedule the exhaust canopy and filters to be professionally cleaned and serviced.
Block all holes in walls and around pipes to keep mice out.
Install door guards to the base of exterior doors to prevent the entry of mice.
Increase the frequency the pest company services the premises (2x a month), and follow all recommendations made by the pest company.
