Observation: Dishwasher not achieving final sanitizing rinse of 200ppm Chlorine at the dish.
Sanitizer solution at the machine is older and not of adequate concentration.

Corrective Action(s): Owner to return at 4:30 with new sanitizer solution for dishwasher.
Facility has set up 3 compartment sink with adequate concentration of chlorine solution in third compartment and fully able to demonstrate proper wash-rinse-sanitize (all without assistance from inspector).
Health Inspector to meet with owner to discuss Dishwasher on Monday at 10:30. Staff are unable/unwilling to test dishwasher daily and this continued issue MUST be resolved.

Observation: Personal cell phones and keys observed in food preparation areas on shelves. Tools observed on upper shelves of food preparation area.

Dishwasher is located next to dough mixer. Splashing water from dishwasher is observed to splash on and around dough mixer. This issue was discussed during previous inspection. Staff are using baking trays to stop splashing water. This is a temporary solution only. REPEAT VIOLATION - this item has been ongoing since rearrangement of kitchen equipment.

Corrective Action(s): Ensure all personal items, such as cell phones, which can be quite dirty are not stored on counters or other food preparation areas. Keep these items on your person or in your purse/coats. Tools should be returned to tool box and are not to be stored in food preparation areas.

Owner must find permanent wall/partition to separate dough mixer from dishwasher. The dough mixer was relocated during renovations and is not protected from contamination in current location. This was discussed at previous inspection. Owner to make necessary changes.

- Remove all personal items from food preparation areas or food storage shelves.
