A routine inspection was completed:
- Walk-in-cooler was 3C; walk-in-freezer was -17C; hot holding unit (steam table) was above 60C; and thermometers present.
- High temperature dishwasher had a rinse cycle temperature of 75.9C at the plate's surface, as per max/min thermometer.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer in spray bottles had strength of 200ppm.
- All foods stored in food grade containers; covered; labelled; date coded; food stored in groups with raw proteins below RTE foods; and foods stored 6" off the floor on shelves.
- FIFO rules being followed.
- General sanitation level is good, improvement seen in detailed cleaning and hard-to-reach areas. Great job in providing more hours to staff, so cleaning can be completed.
- Exhaust canopy and filters are clean. They were professionally serviced and cleaned in August 2024, next service due in February 2025.
- Interior surfaces of ice machine and bin are clean.
- No signs of pests. A professional pest company monitors the premises on a monthly contract.
- Valid, FoodSafe certified staff working.
- Valid health permit and decal posted.
- No damaged equipment, cookware, lids, food containers, or utensils found.
ACTION
- Found expired loaves of raisin bread (dated Sept. 25 & 29/24). Immediately return/discard expired bread. Ensure staff check expiration dates of perishable food items daily. During the inspection, staff removed food items from use. |
