301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): Used wiping rags were placed on food preparation surface of the prep cooler. All wiping rags need to be placed in a sanitizing solution when not in use.
The cleaning of the deli slicer is being maintained; however, old encrusted food debris is noted in the lower section of the guard blade.

304 - Premises not free of pests [s. 26(a)]
Observation: Rodent droppings noted in the back food preparation by the pop station and underneath deli slicer table. Rodent droppings were also noted in the walk-in cooler underneath the shelving units and wall ledge by the walk-in cooler door. Staff cleaned up the droppings and disinfected the area with bleach at the time of inspection. Rodent droppings were black or green. Green droppings indicate that the rodents had consumed posion. Baits are not permitted witin food premises as only live traps are allowed.
Operator has an on-going contract with a pest control company and serivce technician was on-site earlier prior to inspection. According to pest report, rodent activity was noted.
Operator needs to implement more agressive pest control measures with pest control company to eliminate pest problem. More live traps need to be placed and all potential entry points need to be sealed. Pest control company should be on-site weekly until the pest problem is elminated.

Routine inspection conducted and the following were noted:
All cooler units at 4C
Low temperature dishwasher achieved a final rinse concentration of 50ppm.
Hot holding of food products was at least 60C.
All pooled eggs are liquid pasteurized.
Daily cleaning is being maintained; however, more thorough cleaning is needed to prevent and help eliminate pest problem. Hard to reach areas such as: around the dish pit, around the cook line, and dry storage area.
Quats used as sanitized. Solution is manually diluted. Ensure it is frequently changed and measured with test strips to verify the diluted concentration.
Food products were stored at least 6 inches off the ground and stored in sealed food grade containers.
Hand washing stations satisfactory.
Sanitary condition for the inside of the ice machine was satisfactory.
