Observation: NEW OBSERVATION:

Observed workers taking garbage for soup place in the dishwash sink to filter out the water. Operator also indicates that the mop water is dumped in the dishwash sinks as well.

NOTE: there is no mop sink available in this restaurant

Operator suggested using the 2-compartment sink in the back storage area for mop purposes only.

Your restaurant is already limited for utility sinks and in consideration of the size and hours of the restaurant they may not be used for that purpose
Corrective Action(s): Your dishwash sinks are utility sinks for food purposes such as dirty dishes and washing vegetables for example NOT for mop waters or filtered water from the garbage.

Your only choice as of now is to dump the mop water and garbage water in the toilet only.

Another option is to install a mop sink or wash tub as suggested in the coat room or in an area completely away from food areas such as the public washrooms.
