Observation (CORRECTED DURING INSPECTION): 1 )Sanitizer spray bottle had not detectable chlorine. Operator mixed bleach with a cleaning solution.
2) Equipment was stored in the mop sink.
Corrective Action(s): 1) Bleach at 100ppm to 200ppm is required for proper sanitizing of food contact and common touch surfaces. Do not mix chemicals together - it may result in toxic chemical reactions or neutralize the bleach. Bleach at 200ppm was prepared at the time of inspection.
2) Do not store equipment in the mop sink. Any cleaning and sanitizing of equipment must be carried out in the manual warewashing sink. Equipment was cleaned and sanitized and relocated at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Deicing road salt was stored in the kitchen with food.
Corrective Action(s): Deicing road salt is not intended for human consumption. Ensure food items and non-food items are stored separately to prevent potential contamination of foods. Deicing road salt was removed at the time of inspection.

Observation: Rodent droppings were observed in the facility (in storage cabinet and in the storage room).
Corrective Action(s): Facility is to be maintained free of pests. Clean all droppings and sanitize affected with bleach sanitizing solution. Monitor for additional pest activity and contact professional pest control services as needed.

-Walk-in cooler was at 4C.
-Under counter cooler was at 4C
-Prep cooler was at 4C (top and bottom).
-Upright kitchen freezer was at -12C.
-Chest freezer was at -22C.
-Upright front freezer was at -18C.
-Hot holding was greater than 60C.
-Donair meat undergoes a secondary cook step on the grill.
-Cooked meat properly cooled in a rapid manner and was at 4C.
-Facility is currently not using the high temperature dishwasher. Facility is offering take out only as a result of the COVID-19 Pandemic. Manual warewashing carried out in the 2-compartment sink. Sink plugs and bleach available.
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Foods stored off the floor and covered. Raw meats stored separately and below ready to eat foods.
-No self service of food items at this time.
-Washroom clean and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Operator FOODSAFE Level 1 valid until February 1, 2025.
