Routine inspection: production of rice wine, blueberry wine, mead and spirits.

Samples provided in single use cups.
Hand sinks provided with liquid soap and paper towels.
3 compartment sink available for manual warewashing.
All food products in warehouse stored off the floor on pallets or shelves.
Clean in place for stills and fermentation tanks.
Potassium metabisulphite available for use.
Some droppings observed underneath and behind equipment in the warehouse. Place additional traps in the warehouse and monitor rodent activity.

Reminder to sanitize food contact surfaces use a 100ppm bleach sanitizer solution. Dilute 1 oz of regular unscented bleach to 1 gallon of water.
