Observation (CORRECTED DURING INSPECTION): - No chlorine detected in dishwasher when initially checked. After changing the product and resetting the dispenser dials to allow more product to be released then suffient chlorine was detected on test strip.
- Sanitizer was not available for use. Solution was made up during inspection.
Corrective Action(s): - 50-100ppm chlorine is required for adequately sanitizing every load. Recommend using sanitizers specially designed for commercial low temperature dishwashers.
- Ensure that sanitizer solution for work surfaces is ALWAYS available. This must be made before starting foodprep.

Observation (CORRECTED DURING INSPECTION): Items stored in designated handwash sink.
Corrective Action(s): - Hand wash sink must be used exclusively for handwashing. Items in the sink may restrict foodhandler from using the sink for hand washing.
