Deli processing room (temp. room = 5-6 deg C).
Rotisserie area:
-Hot holding for chicken was at 65-72 deg C.
-Blast chiller was below -21deg C.
Temperature log was available and up to date.
Display coolers were at 4 deg C or colder. New gauges installed (indicates whether in defrost mode, alarm mode etc.)
