- Temperature Control: No concerns noted this date. Monitoring required. Temperature gauges are to be kept securely fastened inside all refrigeration units.
- Mechanical Dishwasher: High Temp = Ok. All food contact surfaces are to be cleaned and disinfected after use or on a timely manner. (As discussed - spatulas/tongs, knives, etc.) All items are to be stored in a sanitary manner.
- Wiping cloth storage: Cloths are to be kept completely submerged in a sanitizer at all times. Monitoring required. Solution to be changed on a routine basis. Limit the amount of cloths being used.
- Food Storage: Ok.
