205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Eggs found in the "raw, shelled egg cooler" were 8C, and the cooler air temperature was 12C. Bacteria in the eggs will multiply at 8C and customers could become ill. Manager explained that the eggs were placed in the cooler 1 hour ago.
Corrective Action(s): Immediately move the eggs to the walk-in-cooler and inform staff to NOT store any eggs in the "raw, shelled egg cooler" at it is not able to keep the raw eggs below 4C. During the inspection, the manager moved the eggs to the walk-in-cooler.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Accumulation of food debris and food stains on door handles; exterior & interior surfaces of doors; metal corner plates; and on walls & floors beneath and behind equipment. This will attract and harbor pests.
Corrective Action(s): Increase the frequency these areas are washed with hot water and soap during the day (4 times a day) to remove food debris and stains.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: The "raw, shell egg cooler" was 12C and the cooler fan was not moving. Bacteria will multiply in perishable foods at this temperature and customers could become ill eating the food. The manager was aware the cooler was not working and is waiting for the repair company to arrive to fix it.
Corrective Action(s): Immediately place a sign on the cooler, informing staff not to store any food in the cooler. Call a company to repair the cooler, so it can store food below 4C at all times. Inform staff NOT to place any food in the cooler until it is fixed.

Comments

A routine inspection was conducted:
- Coolers 4C or colder; freezers -17C or colder; hot holding units above 60C; thermometers present; and temps recorded daily.
- High temperature dishwasher had rinse cycle temp of 77.7C at the plate's surface, as per max/min thermometer.
- Quats sanitizer in spray bottle and cloth buckets had strength of 200ppm. Time written on buckets to remind staff when to change the solution.
- Foods stored in food grade containers; covered; labeled; date coded; foods stored in groups with proteins stored separately or below RTE foods; and foods stored 6" off the floor on shelves, racks, or platforms.
- No expired foods in use or food sale. FIFO rules being followed.
- General sanitation level is good, and improvement seen. Focus on hard to reach areas and detailed cleaning, as mentioned in the report. Ensure to remove all items off shelves and in cupboards to clean these surfaces; move equipment away from walls so the floor beneath, and the walls behind get a good scrub; and the walls behind and under sinks and prep tables are scrubbed clean.
- Exhaust canopy is clean, it was done in March 2023. Next professional cleaning is due in March 2024.
- No signs of pests.
- FS certified staff present, or those with an equivalent course.
- Staff wear gloves; hair nets and clean uniforms.
- Hand sanitizer available to staff and patrons.
- Hand washing sink removed by the drive-thru area. This was not approved by our office prior to its removal. It there are concerns with staff not washing their hands frequently or adequately, and/or if we receive complaints from the public. The hand washing sink will be required to be re-installed.
