Observation (CORRECTED DURING INSPECTION): Two small buckets of chickpea sauce were stored at approximately 50C. The food was prepared at 10:30 this morning, approximately 4 hours ago, and was hot-held in a bucket over the chafing dish compartment. A small amount of water was present in the chafing dish compartment.
Corrective Action(s): The two buckets of chickpea sauce (approximately 500 ml each) were discarded at time of inspection. Use only designated chafing dishes in the chafing dish compartment so that your items can be held at 60C or greater. Do not place buckets in chafing dish compartments - they were not intended for this purpose and will not keep foods warm enough.

Comments

Follow-up inspection to routine conducted on February 27, 2019. The following observations were made:
No signs of recent, visible rodent activity at time of inspection in the kitchen area or outside the kitchen in the cabinet area
Handyman will be covering the seal beside the chest freezer outside the kitchen with a metal mesh later this week - good
Kitchen area, including inside the pot storage room, generally maintained in good sanitary condition. Shelving in pot storage room was repainted by the handyman - good

Please remind all staff and your pest control company to diligently check for any entry points, and to keep all doors closed when not in use. Handyman states that pest control company will report to him in subsequent pest inspections to ensure that all traps are accounted for.

No other concerns at this time.
