Follow up inspection conducted: All potentially hazardous foods (PHFs) from the front reach in display cooler were removed at this time. The cooler is currently at 9-10 degrees C at the front end, and less than 4 degrees towards the back end. Sign posted for customers to ask for PHFs (milk, Nanaimo bar, etc.) which is stored in a working cooler. Operator wishes to store limited number of PHFs (e.g., couple bottles of milk) only during busy hours. PHFs may be stored in the display cooler but near the back only. Cardboard boxes are removed from the site. Breads are stored on clean aluminum baking pans now. QUATS dispenser dispensed 200 ppm QUATS as per test strips. Discussed with the operator to reduce the time before the red sanitizer pail is replenished with new QUATS sanitizer (1 hour to 30 minutes). The pail is time stamped.
