Observation (CORRECTED DURING INSPECTION): The black, double door, u/c cooler had milk and pasturized eggs that were 12C. Perishable food items (dairy, proteins, etc.) require to be stored at 4C or colder to prevent bacteria from growing.
Corrective Action(s): Immediately remove all perishable food items from this cooler and store it in one that can maintain 4C or colder at all times. Place a sign on the cooler to inform staff NOT to store any perishable food items in this cooler. During the inspection, the milk and pasturized eggs were relocated to a cooler below 4C.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Staff were cutting fruit in front of the handwashing in the bar area. The handwashing sink was being blocked and other staff were not able to access the sink to wash their hands.
Corrective Action(s): Immediately stop cutting fruit in front of the handwashing sink, and complete this task on a designated prep table. Inform staff of this change. During the inspection, staff moved and was cutting fruit on a stainless steel table in the bar area.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: The glasswasher in the bar area had [I2] of 0ppm during the rinse cycle. Glasses were not being sanitized.
Corrective Action(s): Immediately stop using the glasswasher and call a repair company to fix the machine so the [I2] is 12.5ppm during the rinse cycle. All glassware shall be washed and sanitized in the main dishwasher.

Comments

A routine inspection was completed, the following observations were made:
- Coolers 4C or colder; freezers -18C or colder; hot holding units above 60C; thermometer present; and temps recorded daily.
- Low temp dishwasher had [Cl2] between 50ppm-100ppm during the rinse cycle.
- Quats sanitizer is spray bottles and cloth buckets had 200ppm strength.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with raw proteins below RTE foods; and all foods stored 6" off the floor on shelves or cupboards.
- No expired foods in use. FIFO rules being followed.
- FoodSafe certified staff present.
- General sanitation level is good. Minimal drain/fruit flies found in front bar and dishwashing area.
- Exhaust canopy was professionally serviced in March 2023, next service in June 2023.
- No signs of pests. Pest monitoring done by a professional company, who services the premises every 3 weeks.

**A follow-up inspection will be completed on Apr. 3/23 to ensure the glasswasher is working correctly.**
