Observation (CORRECTED DURING INSPECTION): Steaks hot held at alto shaam unit measured with an internal temperature of 55C. At least 60C is required to hot hold food properly.
Corrective Action(s): Staff reheated the steaks to 74C and increase the hot holding unit's temperature. Ensure hot food is hot held at 60C or above.

Observation (CORRECTED DURING INSPECTION): 1. Quats sanitizer bucket measured with a concentration of 50 ppm.
2. Low temperature dishwasher detected 0 ppm bleach sanitizer at plate level.
Corrective Action(s): 1. Staff discarded and refilled the bucket with 200 ppm quats sanitizer. Clean and sanitize all food contact surfaces near the prep area.
2. Staff switched out the chlorine sanitizer stock bottle and 100 ppm chlorine sanitizer was detected at the dishwasher. Ensure to monitor the volume and concentration of the stock bottle. Clean and sanitize all utensils and plates on site.
