Observation (CORRECTED DURING INSPECTION): Fish fillets placed on a metal plate had internal temperature measured at 21'C. Discarded.
Corrective Action(s): Ensure to have frozen fish/meats thawed by placing in cooler in advance or under cold running water, but never at room temperature.

Comments

Routine inspection conducted:

-Handwash stations adequately supplied with liquid soap, paper towels and hot/cold running water.
-Coolers operating at/below required temperature of 4'C; Freezers operating below required temperature of -18'C.
-Thermometers available in each for temperature monitoring.
-200ppm chlorine solution available in buckets to hold wiping cloths at each station.
-Low temperature dishwasher achieved the minimum level of chlorine (>50ppm) at plate level after final rinse.
-General food storage practice very good throughout the facility.
-Ventilation canopy hood serviced and maintained.
-No evidence of pest activity observed.

General maintenance and sanitation of the facility good at this time.
