Routine check:
Coolers (walk in, salad prep, 2 prep coolers, and 2 bar coolers) are all at 4 C or colder. Records are being kept twice daily (needed for salad prep cooler).
Menu: No menu items with raw eggs. Raw oyster warning is on menu. Check for proper wording.
Keep raw oyster tags for 90 days.
No mechanically tenderized meat - confirm with supplier.
Hand washing station in main kitchen/bar area has liquid soap and paper towels.
The hand washing station in the back kitchen faucet was leaking and plumber is on site repairing. Prep kitchen is not in use at this time until the faucet is repaired.
Confirm repair of faucet (call or email).
Dishwasher has a chlorine final sanitizing rinse (50ppm measured).
Quats sanitizer is used as a spray sanitizer for tables etc. - follow manufacturer recommendations on bottle for proper dilution.
Quats - 400ppm detected using test strip however 200ppm required. Diluted to 200ppm during inspection.
