Observation: - Handsink in pizza prep area is not easily accessible.
- Handsink in kitchen had run out of paper towels (CORRECTED).
- Soap dispenser in bar area had fallen off mount, not easy to dispense.
Corrective Action(s): Hand washing plays a critical role in food safety. Please address the above issues. Ensure all handwash sinks are equipped before the start of any food preparation.

Comments

- Temperature of coolers and freezers were adequate.
- Quat sanitizer available for use.
** Please ensure all food prep areas (kitchen, bar, pizza prep) are equipped with sanitizer. Sanitizer must be in use at all times during a shift.
- Dishwasher in kitchen, final rinse reached 71 degrees C at the plate. Bar washer was 72 degrees at the plate.
** Ensure that the sanitizing temperatures of the dishwashers are checked to make sure they have reached a minimum of 82 degrees C on the gauge before washing any dishes in them.
- General separation of foods noted in the walk-in-cooler.
- No signs of pest infestation.

** Ice machine storage area does not have enough lighting. This makes it difficult to spot if things have fallen into machine and it the machine needs to be cleaned.
