Observation (CORRECTED DURING INSPECTION): -Hot-holding unit used for soup and meatball sauce is at 51 degrees Celsius.
Corrective Action(s): -Operator increased the dial to the maximum setting to increase the temperature. Hot-hold temp is now at 60+ Celsius.
*Ensure to determine the correct setting on the dial to maintain the food temps at 60C/140F at all times, then train staff to always keep the dial at/above that setting.
