Observation (CORRECTED DURING INSPECTION): Repeat violation:
Internal temperature of the following foods in the hot holding unit were as follow. The following foods were cooked and hot held for 1 hour
- Potato wedges at 52C (on the lower level of the holding unit)
- Chicken wings at 55C (on the lower level of the holding unit)
- Samosas at 46C (on the top level of the holding unit)
Corrective Action(s): Discussed with operator that these hot potentially hazardous foods must be hot held at 60C. If internal temperature falls below 60C within 2 hours, the foods must be discarded or reheated to 74C and hot-held at 60C or higher. Owner indicated that they will discard the above food items after 1 hour.

Observation (CORRECTED DURING INSPECTION): Grease observed on the deep-fried chicken rack and tray

Observation (CORRECTED DURING INSPECTION): 1. No surface sanitizer observed in the kitchen area
2. Food contact surfaces are not properly sanitized
Corrective Action(s): 1. Instructed staff to prepare bleach sanitizer (half a cap in 1L of water)
2. Instructed staff to use the bleach sanitizer to sanitize food contact surfaces after surfaces have been cleaned to ensure maximal effectivness of the sanitizer

Observation (CORRECTED DURING INSPECTION): Fly strip observed to be hanging above the kitchen ceiling by the deep fryer and above the handsink in front of the hot-holding unit
Corrective Action(s): Do not use fly strips in areas of food preparation as physical contaminants can be introduced in the food. Operator removed the fly strip in both above areas

Follow-up inspection
- Food debris and cobwebs have been removed from the floor of the kitchen and walk-in cooler
- Fan cover of the walk-in cooler has been cleaned and free of dust
- Front sandwich cooler not in use and labelled as "not working". Sandwiches are stored in the working cooler which can hold temperature of 4C or lower

Note:
- Please ensure that all three knobs and red lights of the hot holding unit are turned on. When all three knobs/ lights are turned on, hot holding unit can maintain temperature of 60C and higher for the lower level. Do not store any hot potentially hazardous foods on the top level as cannot maintain temperature of 60C or more. Please replace the burnt out bulbs for the hot holding unit
