Observation (CORRECTED DURING INSPECTION): Cooked chicken made either the previous night or today ranged from 8C to 13C.
Corrective Action(s): Potentially hazardous foods must be cooled from 60C to 20C in 2 hours or less and from 20C to 4C in 4 hours or less to prevent the growth of pathogens and or the formation of toxins. Do not mix new and old food together and ensure foods are cooled on shallow trays to allow for rapid cooling. Chicken was discarded at the time of inspection.

Comments

-Walk-in cooler was at 3C.
-Upright cooler was at 4C.
-Upright freezer was at -18C.
-Temperatures are checked and recorded daily.
-Hot holding was greater than 60C. Foods were cooked to greater than 74C prior to hot holding.
-Chemical dishwasher had a final rinse of 50ppm to 100ppm chlorine on the dish surface (minimum of 50ppm required for proper sanitizing).
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer dispenser tested at 200ppm.
-Sanitizer spray bottles and pail tested at 200ppm.
-Meat slicer was found to be clean and well maintained. Slicer is properly disassembled for cleaning and sanitizing after each use.
-Ice machine was clean and well maintained.
-General food storage practices good at the time of inspection. Foods stored off the ground and covered.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-FOODSAFE Level 1 valid until July 07, 2023.
