Observation (CORRECTED DURING INSPECTION): 3 containers of soup broth were not properly cooled. Food products were made from previous night. Internal temperature of food product was at 17C. Food products were discarded. All food products must cool from 60C to 20C in the first 2 hours, then from 20C to 4C in the next 4 hours.

Observation (CORRECTED DURING INSPECTION): 1 tray of marinated eggs was stored at room temperature and internal temperature of food product was at 17C. Food product was discarded.
Bowls of deep fried chicken and bbq pork were stored at room temperature. Temperature of food product was at 30C. Foods need to be either stored at 4C or greater than 60C. Food products that are intended for immediate consumption and stored at room temperature, must be discarded after 2 hours if temperature exceeds 4C.

Observation (CORRECTED DURING INSPECTION): Wiping rags were stored directly on food preparation surfaces. When wiping rags are not in use, they must be stored in a sanitizing solution.

Observation: Dishware, utensils, or equipment washed in the high temperature dishwasher were not properly sanitized as the unit was not in good working order. 2-compartment was not available for the sanitizing of larger food equipment since the plumbing for the sanitary discharge pipe had been removed.

Observation: Water pooling underneath the 2 compartment sink and hand washing station as the sanitary pipe was removed. A bus pan tray was used to catch water discharged/dripping from the 2 compartment sink. The 2 compartment sink was filled with water for thawing meat products and squid.

Observation: Through cleaning is needed throughout the kitchen. Build up of grease was noted between and behind the cooking units. Build-up of old food debris was noted on all shelving units in the kitchen.

Observation: High temperature dishwasher is not in good working order as only a final rinse temperature of 61C was achieved at plate level. A temperature of at least 72C must be achieve after the final rinse cycle of a high temperature dishwasher.
