Chef on-site today has a valid Food Safe certificate (2022).
Hand washing sink has liquid soap and paper towels.
Coolers are at 4 C or colder and temperature records are up-to-date - good.
Produce is washed on site or pre-washed and ready to use.
No hot holding of foods taking place during inspection.
Chlorine sanitizer is in a labelled spray bottle and is used on counter and food contact surfaces. Today, concentration is >400ppm. When making chlorine solution, make fresh solution regularly as it gets weaker over time and 1 tsp domestic bleach is needed in 1 litre of water or 2 mL bleach in 500mL water (200ppm required).
Commercial dishwasher has a hot water final sanitizing rinse (100C at the final rinse gauge measured 71C inside of the machine) - good. Dishwasher is maintained regularly.
Monitoring traps are being used. Licensed pest control is monitoring as well. No evidence of pests.
Cupboards have been repaired and are clean.
