Note:
- Discussed hot holding of chicken - must be held at ≥ 60°C. Operator will explore options such as obtaining deeper inserts and adjusting/changing the heat lamps. As a temporary measure, chicken will be held at ≤ 60°C for no more than 2 hours. After 2 hours, any remaining chicken shall be discarded. Provide written procedures on how you will do this to the health inspector.
