- Food handlers wear hairnets and beard nets. Uniforms appear clean.
- Bakery Open Display Coolers (Upright and Coffin): ≤4 deg C *Ensure that products are not stocked beyond unit load limit line.
- Walk-In Cooler: 1 deg C
- Walk-In Freezer: -20 deg C
- Temperature monitoring records appear maintained and up-to-date. Temperature checks are taken every 2 hours daily between 9 am and 9 pm.
- Food storage practices appear satisfactory - storage is organized, food is protected from contamination.
- Wiping cloths stored in 200 ppm Quats sanitizer.
- High Temperature Sanitizing Dishwasher: >77 deg C at dish surface (3-Temp Thermolabel)
- General sanitation of premises appears satisfactory.
- Monthly pest control services provided by Orkin. Follow all recommendations provided by your pest control company.

Note:

1. Some areas of bakery department flooring requires replacing (epoxy is lifting/ peeling). Assistant Warehouse Manager is aware of issues and flooring is under warranty and that repairs are being scheduled.

2. Assistant Warehouse Manager advised that bakery renovations are being planned. Walk-In Cooler and Walk-In Freezer will be expanded, production area will be reduced. Many baked products will be par-baked at Costco Commissary to account for reduced production area. **Floorplans must be submitted to Fraser Health for review and approval before any renovations may take place.
