***Once exhaust canopy has been serviced, verify that grease is being captured in the grease containers on either end of the exhaust canopy. If not, the canopy itself may require servicing to prevent grease from dripping down and accumulating along the wall surface behind the grill which can become a potential fire hazard. Grease diffusers in the exhaust canopy have been cleaned. Ensure these are cleaned on a regular basis ie at least weekly.
