Observation (CORRECTED DURING INSPECTION): Phyllos (pastry with fillings such as feta cheese, grilled mushrooms, spinach/feta cheese) stored at room temperature in the retail space.
Corrective Action(s): Immediately move all phyllos inside the display cooler or begin time tracking. Phyllos with cheese filling can be stored at room temperature (<24C) for max 4hrs with time labels and tracking. Time tracking log is to begin immediately for this method.

Comments

- General sanitation is satisfactory.
- Handwashing station (in food processing section) supplied with hot/cold running water, soap, and paper towels.
- Three compartment sink available for manual dishwashing. QUAT sanitizer available at 200ppm concentration. The operator is proposing to install premeasured sanitizer dispenser.
- Surface sanitizer available in bottle at 200ppm QUAT solution at each station. Ensure to regularly change out the sanitizer.
- Dry storage area has adequate space and wire racks. All boxes and food items must be stored min 6inches (15cm) off the floor to facilitate cleaning.
- No signs of pest activity at the time of the inspection. Pest management system in use.
- FOODSAFE certified staff on duty.
- Gloves, hairnets, aprons worn by staff.

Temperature Control:
- Walk in freezer (bakery section) = -15C
- Walk in cooler (food processing section) = 4C
- Walk in cooler (upstairs) = 4C
