Routine inspection conducted today:

Main Kitchen
- All handwash stations (including staff washroom) were accessible, equipped with hot and cold running water, liquid soap and paper towel.
- QUAT sanitizer containers were setup at the prep station - 200 PPM QUAT detected.
- All food contact items were noted in a sanitary condition and in good repair - including cutting boards.
- All refrigeration units were at 4.0C or below.
- All freezer units were at -18C or below.
- All food stored protected and in the proper storage hierarchy.
- One hot hold unit was plugged in and the internal temperature was noted well above 60C - no food noted stored within this unit.
- Interior of the ice machine and fume hood noted in a sanitary condition - next cleaning for the fume hood noted for October 2023.
- High temperature dish machine was able to reach 71.9C at the plate level and over 82.0C at the gauge level during the rinse cycle.
- Drain plugs were available at the 3-compartment sink.
- Wall mounted QUAT sanitizer dispenser was dispensing 400 PPM of QUAT.
- No signs of pest activities noted during the inspection.
