Observation (CORRECTED DURING INSPECTION): Dirty plates and utensils were stored in the sushi bar area hand washing station.
Corrective Action(s): Remove all utensils and plates from the hand washing station immediately. Do not store any items inside the basin of the hand washing station as this obstruct proper hand washing procedure.

Comments

Routine inspection:
- Coolers (glass-door, chest, bar, beverage) maintained at 4C or less.
- Stand-up freezer and chest freezer maintained at -18C or less.
- Rice in the warmer hot held at above 60C.
- Sushi rice measured with a pH of 4.2.
- Hot potentially hazardous food hot held at 60C or above.
- Other hand washing station provided with hot/cold running water, liquid soap and single use paper towels.
- 200 ppm chlorine solution available in sanitizing spray bottles.
- High temperature dishwasher registered 72.5C at the plate level.
- Operator stated he has a temporary FOODSAFE Level 1 certificate. Waiting for the actual certificate to be mailed in. Email a scan copy of the temporary certificate to the Environmental Health Officer.
- General sanitation satisfactory.
- No pest activities observed at the time of inspection.
