Comments

-Kitchen and storage room maintained in a sanitary condition.
-Food products stored on shelving in dry storage room. Ensure packages (raisins, sugar) are tightly sealed to protect food from contamination and prevent attraction of pests.
-Handsink supplied with liquid soap, paper towel, hot and cold water
-Single door cooler and double door cooler were at 4C
-Freezer was at 16C
-Temperatures of cooler/freezer units checked and recorded daily. Revise form to indicate required temperature and ensure corrective action is recorded when required temperature is not met.
-High temperature dishwasher dishwasher was operational and met sanitizing temperature requirement. Final rinse was 73C at dish surface. Reviewed monitoring using external gauge with staff on duty. Recommend adding this to kitchen log.
-Bleach sanitizer solution (200ppm) present in bucket with wiping cloth stored in the solution.
-No signs of pest activity noted at the time of the inspection.
-Staff on duty in the kitchen has recently completed Foodsafe level 1 (within past 3 months).
-Reminder: Foodsafe level 1 certificates issued prior to July 29, 2013 will expire July 29, 2018. See foodsafe.ca regarding refresher course to renew certificates if applicable. Review Foodsafe certificates for other kitchen staff to ensure there is 1 person present with Foodsafe level 1 at all times.
