Observation (CORRECTED DURING INSPECTION): Sanitizer spray bottle at front service area measured at 0-50 ppm QUATS concentration with test strip. Staff replaced the solution from QUATS dispenser at the 3-compartment sink at the back of the premise. QUATS sanitizer in the spray bottle measured at 200 ppm after it was changed.
Corrective Action(s): Change solution in all sanitizer spray bottles and sanitizer pails more frequently to ensure sanitizer at is at required strength to kill potential pathogens on food contact surfaces, equipment and utensils. Ensure QUATS sanitizer strength is maintained at 200 ppm with the available ecolab test strips.

Routine Inspection Conducted

1. Temperature:
- Walk-in cooler at 3'C
- Under-counter prep cooler at 3'C
- Sandwich cooler at cooking line at 3'C (top and bottom)
- Drawer coolers (under cooking line) at 3'C
- Hot-holding units measured at >60'C
- Temperature logs maintained (digitally) and temperatures are checked every 2 hours

2. Sanitation:
- General sanitation of premises satisfactory
- Hand washing stations supplied with liquid soap, paper towel, hot and cold running water
- QUATS sanitizer pail at front measured at 200 ppm QUATS concentration
- 3-compartment sink available with drain plugs for manual ware-washing
- 4-compartment sink available with drain plugs for food preparation
- Ventilation hood kept in good sanitary condition

Note: manager noted that milkshake wand is currently being sanitized at the end of the day. As the wand is considered an in-use utensil, recommended to manager to clean with soap and water and sanitizing the wand every 2 hours to prevent bacteria growth and/or toxin production. Approved sanitation plan will be reviewed and a consultation will be provided to staff regarding this machinery.

3. Storage:
- All food stored at least 6 inches off the floor
- All food observed covered
- Chemicals stored away from food

4. Pests:
- No signs of pests observed during inspection
- Pest control company contracted - inspection reports available for review
- Multiple snap traps observed in place in the back area
- Steel wool observed placed inside a hole in the drywall underneath the sink in the back area. Staff mentioned that the hole will be properly filled to replace the steel wool.

5. Administration:
- Food Safe Level 1 trained staff available on premises
