Clean in place for all large items. 3 compartment sink setup for manual warewashing. Pan washer registers 72 degrees C at the plate surface during the final rinse cycle. Walk in cooler at or below 4 degrees C. Walk in freezer at -12 degrees C. Retail area display coolers at or below 4 degrees C.
