Observation (CORRECTED DURING INSPECTION): Thawed fish in sink was measured to be between 19C and 24C.
Corrective Action(s): Fish discarded at time of inspection.

Observation (CORRECTED DURING INSPECTION): Dough machine had accumulation of food debris (dough and flour). Staff stated the dough machine was left dirty overnight.
Corrective Action(s): As previously discussed, do not leave equipment dirty overnight. Staff began cleaning the dough machine during inspection.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Designated kitchen hand sink was being used to thaw fish.

Corrective Action(s): Use the larger food preparation sink to thaw fish and prep food. The hand sink must only be used for hand washing. Staff emptied, cleaned, and sanitized hand sink at time of inspection.

Observation (CORRECTED DURING INSPECTION): Frozen fish was thawing out at room temperature (in the kitchen hand sink). Staff stated the fish had been thawing overnight.
Corrective Action(s): Fish was discarded at time of inspection. Do not thaw food out at room temperature. For proper thawing, use one of the following methods:
1) Thaw in the refrigerator overnight
2) Thaw under cold, running water at 4C or colder
3) Thaw in the microwave/as part of the cooking process.

Observation: - Floors behind and underneath cook line equipment require cleaning.
- Floors in between dishwasher and prep counter require cleaning.
Corrective Action(s): Ensure all hard-to-reach areas are cleaned and sanitized at least once a week.

Comments

- Hand sinks supplied with hot and cold running water, liquid soap, and paper towels. *Hot water pressure/flow at bar hand sink is low. Contact a plumber and ensure there is adequate flow/pressure of both hot and cold water at all sinks.
- Bleach sanitizer solution available. Sanitizer solution tested to be slightly too strong - ensure to mix only 1/2 tsp of bleach per litre of water for proper concentrations.
- High-temperature dishwasher reached 71C at the dish surface during final rinse cycle.
- Coolers measured at 4C or colder.
Note: Top right portion of pizza prep cooler still not maintaining temperatures of 4C or colder. Continue to not store potentially hazardous food items in this area of the cooler. The bottom portions and top left portions of the pizza prep cooler were measured to be between 3C-4C.
- Freezer temperatures satisfactory. Chest freezers have proper seals.
- Food storage practices satisfactory. Good separation between raw and ready-to-eat food items and vegetables. All food items stored properly covered and off the floor. Improvement in food storage practices noted - good.
- Discussed cleaning frequency of ice machine. OK
- General sanitation has improved, however more attention needed in hard-to-reach areas.
- No signs of pest activity noted at time of inspection
