Observation (CORRECTED DURING INSPECTION): Sanitizer in spray bottle measured between 0 - 100ppm QUATS at time of inspection. Manager was unable to identify when spray was mixed.

Educate staff to understand that sanitizer must be mixed fresh daily. Discard at end of day.

4. Handwashing station located behind heavily soiled curtain. Staff must handle curtain after washing hands to access main dining area and kitchen.

3. Build up of grease/water/food debris observed under 3 compartment sink. Main contribution likely due to leak of pipe. Tiling appears to be missing in this area allowing for build up.
Corrective Action(s): 1, 2: Clean identified areas immediately. These should be part of your regular cleaning schedule as per approved sanitation plans. Range hood filters stated to be cleaned every 10-15 days by staff. Range hood needs to be cleaned more frequently (weekly).

Facility is no longer set up as per approved floor plan. A copy of the proposed floor plan must be submitted approval prior to making further changes to facility.

Handsink in kitchen area is part of 3 compartment sink (left most compartment)
Sanitizer in spray measured 200ppm QUATS by end of inspection
Chemical dishwasher measured 100ppm bleach

Storage:
Most food items were stored at least 6" off the floor.
All products were either in original packaging or covered inside coolers.
Chemicals and cleaners were stored separate from food preparation areas.

General:
No pest activity observed at time of inspection
Ziploc bags of snacks available for purchase at front area. Please create labels for bags. Labels should include basic traceability information including: Restaurant name, address, contact information, allergens, and production date.
