Observation (CORRECTED DURING INSPECTION): Observed a small amount of spring roll stored in temperature danger zone for less than an hour. It was relocated to a near by cooler.

Observation (CORRECTED DURING INSPECTION): Observed a knife stored in between two stainless steel work stations. Accumulation of dried food debris noted in between these work stations. A knife was washed and sanitized at this time. Knives are to be stored in sanitary surfaces.

Routine inspection conducted:
Hand washing stations are fully equipped with hot and cold running water, liquid soap and paper towels.
General sanitation is adequate.
All coolers measured at 4C or less.
All freezers measured at -18C or less.
Hot holding measured at 60C or higher.
High temperature dishwasher's sanitizing cycle measured at 73.7C at the plate level.
Food contact surface sanitizer solution measured 100-200 ppm as per test strips.
No sign of recent pest activity noted at this time.
Bean sprout and basil leaves stored in ice water.
