Observation: 4 buckets of soup found cooling improperly in the walk in cooler (full 5 gallon pails, no cooling stick)
Corrective Action(s): You must cool soup from 60C to 4C within 4 hours. Use cooling sticks every time. Cooling sticks were stored away, not in the freezer and were not being used. Next time your soup will be discarded if it is found to be cooled unsafely.

Observation (CORRECTED DURING INSPECTION): Prep cooler with sliced meats (closest to the dishwasher) measured 10C
Corrective Action(s): Immediately remove perishable foods from this cooler. you may store small amounts of food in this cooler (only what can be used up within 2 hours). Do not ever use this unit to cool hot foods - use the walk in cooler to cool, then you may store hot foods in the prep cooler.

Observation (CORRECTED DURING INSPECTION): Dishwasher final rinse did not contain an acceptable level of sanitizer
Corrective Action(s): Bleach sanitizer measured less than 50ppm in dishwasher - adjust or repair dishwasher so that final rinse contains 50-100pm bleach solution. CORRECTED. sanitizer bucket was changed for a new one, and dishwasher final rinse measured 50ppm. DO NOT water down sanitizer.
