Observation (CORRECTED DURING INSPECTION): Dipping sauce labelled "Refrigerate After Opening" was stored at room temperature.
Corrective Action(s): Ensure foods labelled "Keep Refrigerated" or "Refrigerated After Opening" are stored at 4C or less to prevent potential growth of pathogens and/or the formation of toxins. Sauces were moved into the walk-in cooler at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Cheese grater and dicer were found to have food debris from previous use.
Corrective Action(s): Ensure all equipment is properly cleaned and sanitized to prevent potential contamination of foods. Equipment may need to be soaked prior to washing and sanitizing. Equipment was cleaned and sanitized at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Handwash station did not have single use paper towels.
Corrective Action(s): Ensure handwash stations are accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels to facilitate proper handwashing. Roll of paper towels was placed at the handwash station at the time of inspection. Recommend placing a paper towel dispenser by the handwash station to ensure the paper towels do not get moved.

Observation: 1) Scoops were stored inside ingredient containers with the handle immersed in the ingredients/sauce.
2) Onions were stored on the floor.
Corrective Action(s): 1) Ensure scoops are stored in a sanitary manner to prevent potential contamination of foods.
2) Ensure foods are stored off the ground and protected from potential contamination.

Observation: Water was stored in a bottle labelled sanitizer and bleach bottle in the front was unlabelled.
Corrective Action(s): Ensure all containers are properly labelled to identify their contents and to prevent accidental mixing and/or misuse of chemicals. Containers will need to be relabelled as needed.

Comments

-Walk-in cooler was at 4C.
-Pizza prep cooler was at 4C (top and bottom).
-Wine cooler and single door prep cooler have been removed.
-Bar cooler is used for storage of non potentially hazardous foods.
-Upright freezers were at -18C and -28C.
-Chest freezer is no longer being used.
-Pizza is sold by the slice on weekends in the hot holding cabinet. Time tracking system in place to verify the pizza is discarded if not sold within 2 hours.
-Temperatures are checked and recorded daily.
-Chemical dishwasher had a final rinse of 50ppm chlorine on the dish surface during the final rinse (minimum of 50ppm required for proper sanitizing). Recommend placing a lid or plastic wrap around the sanitizer pail to decrease the amount of evaporation.
-Bleach sanitizer spray bottles were at 100ppm and 200ppm.
-General sanitation good at the time of inspection.
-Facility is serviced by a professional pest control operator.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary. Handwash station supplied with liquid hand soap and single use paper towels.
-FOODSAFE Level 1 valid until August 15, 2028.
