Observation (CORRECTED DURING INSPECTION): No QUATs sanitizer prepared during time of inspection. Spray bottles (X2) were filled with glass cleaner and measured at 0 ppm QUATs concentration with test strip. Staff prepared bleach sanitizer during time of inspection.
Corrective Action(s): Ensure QUATs is prepared fresh daily in labelled spray bottles and measured at 200 ppm QUATs concentration with test strips (as per approved sanitation plan). Prepare fresh bleach sanitizer in spray bottles daily at a strength of 200 ppm chlorine concentration if the QUATs dispenser is not functioning.

Observations:

- Hot-holding unit measured above 60'C
- General sanitation of premise satisfactory
- Hand washing station supplied with hot and cold running water, liquid soap and paper towel
- High-temperature dishwasher measured at 73'C at plate surface
- Hand washing station supplied with and cold running water, liquid soap and paper towel
- All food stored at least 6 inches off the floor, covered, and protected from potential contamination
- Operator has submitted updated plans for single-use equipment storage at the back of the premise. All items are covered and not accessible to the public

*NOTE: QUATs sanitizer dispenser is not functioning during time of inspection. Staff prepared fresh bleach sanitizer in spray bottle during inspection which measured at 200 ppm chlorine concentration with test strip.
