=BOH and FOH handwash stations stocked with liquid soap, paper towels, and hot/cold running water
=Walk-in cooler (2C) and prep cooler (2C) measured < 4C, upright freezer measured -18C
=Rice hot holding (71C), black beans hot holding (72C), rice hot holding in undercounter cabinet (66C) measured > 60 degrees C
=Low temperature dishwasher measured 0 ppm chlorine at the plate surface, however staff were manually sanitizing dishware in the 2 compartment sink as a temporary measure until the unit is repaired. Sanitizer measured 200 ppm QUATS out of dispenser
=Wiping cloths stored in sanitizer solution at 200 ppm QUATS
=General sanitation was satisfactory at the time of inspection, no evidence of pest activity at the time of inspection
=General food storage practices satisfactory at the time of inspection. Foods properly stored off the floor and covered.
