Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Produce cleaning knives stored outside of produce cutting room, visibly soiled with debris on magnetic knife strip.
Correction: Food equipment, food utensils and clean in place food contact surfaces must be manually cleaned and sanitized following the 4 step method;
1)clean surface of debris using warm water and detergent,
2)rinse surface with warm water,
3)immerse for 2 minutes in 200 ppm Quaternary Ammonia sanitizer solution,
4)allow surface of item to air dry before next use.

Produce cutting to take place in cutting room in presence of cleaning facilities and handwashing facilities for staff to use.
Comments

Potentially hazardous foods (sliced produce, fresh coconut water) not observed stored at room temperature. Winter melons stored in refrigerated wall display cooler.

Knives removed from side table outside from cutting room. Soiled knives not observed stored on magnetic wall strips.

Reviewed with manager, all produce trimming / cutting to take place in cutting room in proximity to handwashing facilities and cleaning / sanitizing facilities.

As-built floor plan provided to reflect current premise layout following retail area renovations.

E-commerce department re-organized to allow all cold storage units to be positioned to be fully accessible. Adequate shelving units provided to store all inventory off the floor and allow for premise cleaning.

Cleaning in receiving area and adjacent warehouse corridor conducted. Ensure frequent cleaning is conducted to maintain a high level of sanitation and discourage pest activity.

Produce storage walk-in cooler has been serviced, temp 3 C.
