Observation (CORRECTED DURING INSPECTION): Chlorine sanitizer buckets measured at approximately 10-50 ppm.
Chlorine level should be at 100-200 ppm to ensure adequate disinfection of food contact surfaces (5-log reduction of bacteria). Increasing disinfectant level will help ensure that customers do not receive foodborne illness from inadequate disinfection. Corrected during inspection.
Ensure that bucket solution is replaced often enough to maintain 100 ppm Cl.
