Routine inspection conducted and the following were noted at the time of inspection:
Walk-in cooler was at 4C.
Standup cooler was at 2C
Walk-in freezer was at -18C.
Hot holding temperature of food products was at least 60C.
Raw chicken breast cooked on the grill achieved an internal temperature of at least 74C. Ensure internal temperature of meat products are monitored and a probed thermometer is used.
Vegetable products for salad were being washed. Ensure all produce are properly washed prior to being served.
High temperature dishwasher achieved a final rinse temperature of 74C at plate level. In addition to relying on the temperature gauge on the machine, a memory waterproof should be used to verify a plate level of at least 71C is achieved.
General sanitation was satisfactory.
No pest activity noted. Facility has a monthly contract with a pest company.
Quats dispenser was at 200ppm. Quats sanitizer available in food preparation area. Ensure quats test strips is available to verify a concentration of 200ppm is achieved. This should be done daily.
All food items properly covered and stored at least 6 inches off the ground.
Hand washing stations satisfactory.
3 compartment and prep sink satisfactory.
