General Comments
Low-temperature dishwasher booster heater is not working at time of inspection. Operators are aware, have ordered the booster spare part and it should be installed today. Until booster heater installed, all dishware/equipment must be washed with warm water to remove grease and debris prior to placing into dishwasher. Sanitizer cycle works - tested at 50 ppm chlorine. Chlorine test strips are on-site. Check every cycle to ensure 50 ppm reached. *Recommend: Begin recording sanitizer concentration in a log daily, prior to running first cycle to ensure 50 ppm is reached at the plate level.
*Recommend: Record cooler/freezer temperatures in a log daily
