Observation (CORRECTED DURING INSPECTION): Large chef's knife and two smaller knives in a drawer had grease and food debris on them.
Corrective action: The knives were run through dishwasher at time of inspection. Ensure all equipment and utensils are properly washed, rinsed, and sanitized so that they are clean after each use.

Comments

Comments:
-General sanitation is excellent - debris and waste is swept away and floor is mopped daily. Walk-in coolers freezers are clean.
-No signs of recent pest activity were observed
-Quats sanitizer pail with cloth available for use, contained 200 ppm quats
-Dishwasher achieved temperature of 74C (final rinse at the plate)
-All handwash sinks equipped with liquid soap, paper towels, and hot/cold water.

1)Temperatures:
-Walk-in cooler: 3C
-Walk-in freezer: -15C
-Walk-in cooler (for desserts): 3C
-Stand-up cooler: 4C
-All other prep coolers were at 3-4C

2)Sanitation:
-Deli slicer was not in use at time of inspection. No signs of debris or grease were found inside.
-"Dish pit" area is clean and uncluttered

3)All services (1st and 2nd floor)
-hot held units not in use at time of inspection
-refrigerator and freezer were at 3C and -12C respectively (1st floor) and at 4C and -10C respectively (2nd floor)
-handwashing sinks equipped with liquid soaps, paper towels, hot/cold running water.

Recommendations:
-Cook line area → surface above oven has accumulation of dried up food debris. Clean the area once daily
-During inspection, 1 of the handwash sinks was obstructed with a trolley. No food was being prepared /processed at time. In the future, ensure that trolley does not obstruct handwashing sink, particularly when food is being handled.
