Routine inspection conducted:

MAIN KITCHEN:
-Handwash stations adequately supplied.
-Refrigeration temperatures within requirement. Temperature monitoring system in place. No issues observed from recent records.
-Automated QUAT dispenser at correct concentration of 200ppm.
-200ppm QUAT available in a large bucket to hold wiping cloths, and in labelled spray bottles as well.
-High temperature dishwasher achieved 74.3'C at the plate level after final rinse.
-Dry storage room satisfactory. General food storage practice throughout very good.
-No evidence of pest activity observed. Professional pest control company contracted.
-General maintenance and sanitation of the facility good. Couple areas require minor cleaning- floors underneath storage shelves in dry storage room and walk-in cooler fans.

SERVERIES: 4 in the main kitchen building and 2 in the other
-Handwash station adequately supplied.
-Refrigeration temperature within requirement; Hot-holding temperatures within requirement.
-Temperature recording chart maintained on a daily basis.
-200ppm QUAT available for surface disinfection.
-High temperature dishwasher achieved >71'C at the plate level after final rinse.
-No concerns observed at this time.
NOTE: Staff delivering hot lunch observed probing foods to check temperature prior to serving at each servery. Good.
