Observation (CORRECTED DURING INSPECTION): Food contact surface sanitizer not available at the time inspection. At least one food grade sanitizer at the right concentration is required during food service.
Corrective Action(s): Ensure a food grade sanitizer with a properly labeled container or bucket in use. Concentration of Chlorine solution required is 100 to 200 ppm Chlorine or QUATS at 200 to 400 ppm. Log concentration of chemicals tested daily for records.

Dedicated hand sink with liquid soap and paper towels available.
Staff demonstrate good personal hygiene and sanitary hand washing.

Temperature holding is adequate and in use with accurate thermometers and logs.
2-compartment sink in use. Chlorine sanitizer in use at 100 ppm in sani bucket after correction.
Dishwasher final rinse at 75.1C at the plate.
Pantry is well organized and secured/locked.
Valid Permit posted in conspicuous location.

Recommendation: Ensure to keep daily logs for chlorine sanitizer and dishwasher.
